I scream, You scream, we all scream for ice cream.
Summer is here, and so is the season of the king of all fruits – Yes you guessed that right. It is the season of Mangoes. Mangoes have finally hit the fruit markets of Calcutta. Yesterday my husband got a few kilos of them on his way back from office. I kept wondering how I could put them to use in a proper way. And then, the sweltering heat reminded of ice cream.
So what if I tell you that you can make delicious mango ice cream at home with as few as three ingredients? Unbelievable right! Trust me, you will never go back to store bought ice creams again. Read on to know how I achieved it.
Mangoes – 4-5 pieces (I used Golapkhaas variety here)
Powdered Sugar – 2-3 heaped tablespoons (You can adjust the sugar as per your sweet tooth)
Whipped Cream – Around one cup
Deseed the mangoes, and peel them. Then blend them in a mixer/blender until the pulp is smooth. I had saved a few bits and pieces of mangoes which would be used as a topping.
Whip the cream until soft peaks form. Use a hand mixer to do so, since blending with a whisker is quite a herculean task.
Combine the mango pulp with the whipped cream. Add the powdered sugar to the mixture. Fold in the mixture and then pour the contents into an aluminum mould. Put it into the freezer compartment for around 3-4 hours. Delicious mango ice cream is ready! Serve it with toppings like bits of mango pieces. Decorate it with tutti fruity, raisins, cashews to form a sundae.
