Kebab-e-Ishq | Chicken Malai Tikka | Mushroom Tikka | Cook Na Kaho

Here is a question for all the Bloggers who are reading this post. Has it ever occurred that you have tons of requests for documenting a post, but no “blog-worthy” photos to compliment it? Well, here is one such case! However, without any hesitation, I’ll gladly document this recipe on my Blog for my readers.

Also, thanks a ton for showering all your love on my Instagram Stories. When asked if you would love to have the recipe of Chicken and Mushroom Kebabs, I got many messages asking for it. Hence I decided to turn it into a Blog Post, where it can be documented for further reference. So let’s dive straight into the recipe-

For Chicken and Mushroom Kababs, you first need to prepare a simple marinade, after which the chicken and mushroom needs to be dipped in the marinade and rested for an hour or so. Then you can either grill them in microwave (convection mode) or take a frying pan and fry them in oil. Remember to roast them on the gas flame once they are fried.

Procedure:

Take some fresh cream in a bowl (Ideally this should be substituted with hung curd, but since I do not like curd, I have used cream). Add in some Tandoori Masala, Kashmiri Mirch Powder, White Pepper Powder, Black Pepper Powder, Salt, Chat Masala, Black Salt, Ginger-Garlic-Green Chilly-Coriander paste, Kasoori Methi, Roasted Zeera Powder, Lemon Juice, Mustard oil and whip it well.

(Secret tip: If you do not have all these ingredients on an emergency basis, just add in cream/curd, tandoori masala, salt-pepper and lemon juice).

Next add in the Mushroom (Mushrooms should be cleaned, dried and kept whole) and Chicken pieces (Preferably boneless thighs cut into cubes). Also throw in diced capsicum and diced onions. Allow it to marinate for atleast an hour (you may keep it in the fridge).

Next take a few skewers and dip them in water. Now insert the marinated pieces of chicken, mushroom and veggies, all one by one into the skewers. Meanwhile pre-heat the microwave in the convection mode at 180 degrees Celsius. Then place the skewers on the grill tray and let the pieces cook for 7 minutes. After 7 minutes, just turn the skewers and let them cook for another 3 minutes. Your delicious kebabs will be done in 10 minutes flat! Brush the kebabs with a little butter. You may also add in some grated cheese over it. Let it melt on its own. Serve the kebabs hot with a dash of lemon juice and some onions by the side. Some fresh mint chutney would also be a perfect accompaniment.

This is an excellent starter, specially during winters and you can prepare prawn and paneer kebabs with the same marinade. I have even marinated broccoli with this and it turned super delicious. Just remember to blanch the broccoli in hot water before marinating them.
